Cashew Butter

That’s right… not peanut butter, not almond butter, but cashew butter! A friend told me how easy it was to make, so you know I had to try it out. OMG it is so good and I highly recommend it to anyone who loves peanut butter, and is looking for a heather option.

(Oh, did you know that store bought peanut butter can have as many as 20 different ingredients… most of which are preservatives?)

Cashew Butter Recipe

What you need:

  • Cashews
  • Olive oil
  • Orange juice squeezed from orange (optional)
  • Cinnamon

What you do:

  1. Add cashews to your food processor. One can of nuts yields about a cup or small jar. Next add about a tablespoon or two of olive oil, and about half a tablespoon of cinnamon.
  2. Blend like crazy, then blend some more… and when you are done blend 2 more minutes. I think my total time was between 10 and 15 minutes. You will also need to constantly use your spatula to wipe the walls off.
  3. Mine was looking a little dry after 10 minutes so in lieu of adding more oil I squeezed a little juice, from an orange, into the food processor and that did the trick.

For more tasty treats try adding a tablespoon of cashew butter into your “ice cream”. Remember my healthy recipe?

Or add 2 tablespoons into your favorite stir-fry to give it a creamy and unique taste!
